A new website prepared by the state Department of Agriculture, Trade and Consumer Protection helps customers pin-point the smokers, curers and sausage makers that make the Badger State famous.
The searchable map allows users to search for meat makers by county, city, type of meat or type of meat product. Looking for jerky or snack sticks? Deli loaves? Pre-cooked heat-and-serve meats?
Plotted in Milwaukee County are Franklin Meats on the South Side, Lindsay Foods on West National Avenue, the Bay View Packing Company, Bolzano Artisan Meats on North Holton Street and Downtown favorites Usinger’s Famous Sausage, Kissinger’s Meat and Poultry and Malone’s Fine Sausage.
Unlisted processors can ask to be added to the database. One noticeable omission is Glorious Malone’s Fine Sausage on the South Side. The company’s late founder, Glorious Malone herself, will be inducted into the Wisconsin Meat Industry Hall of Fame on May 12.
Malone’s recipes for headcheese, a loaf made from pork meat taken from pigs’ heads, propelled the company to Midwestern fame. She died in 2007 at the age of 75, but daughter Daphne Jones is the meat-maker’s new leader. Its processing plant is located on West Walnut Street.
